recipe : carrot cake with hazelnut frosting.

Assalamualaikum :)

buat 2 biji smalam n habis tak smpai 2 hari!
so soft n less in sugar.
perfect for breakfast n high tea :)

resepi sy ambil dari joy of baking.
tapi dah di'renovate'kan mengikut suke hati sy. ;p



ingredients :

120gm pecan/walnut
340gm raw carrot (dlm 3 carrot)
260gm all purpose flour
1 teaspoon baking soda
1 1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoon cinnamon powder
4 large eggs
230gm granulated white sugar
200ml vegetable/ canola oil
2 teaspoon rose extract (perisa ros)

hazelnut frosting ingredients :

57gm unsalted butter (prefer brand buttercup)
227gm philadelphia cream cheese (make sure softkan gune room temperature)
180-200gm powdered/icing sugar. sifted
1 teaspoon vanilla extract
some lemon zest
50gm hazelnut (chopped into small bits)

how to :

1. panaskan oven kpd 160C.

2. toast walnut/ pecan sampai naik bau. agak2 da wangi,
biarkan sejuk. then potong halus2.

3. peel n finely grate the carrots.

4. in a separate bowl, masukkan flour, baking soda, baking
powder, salt n ground cinnamon. *ayak sume2 neh kecuali garam.
then kacau gune sudu so mixture ni sebati.

5. in bowl of electric mixer, beat the egg untill frothy(around 1 min).
then masukkan gula sedikit demi sedikit. beat smpai nampak
adunan jadi thick n light coloured (around 5 mins). masukkan minyak n
perisa ros. slowly, masukkan sedikit demi sedikit
flour mixture yg kite dok kacau2 kat bowl lain td tu.
bile dah sebati, masukkan carrot n walnut/pecan yg kite dah
potong kecik2 td tu.

6. bila dah masukkan carrot n walnut tu, tak perlu guna electric mixer dah.
gaul gune spatula just to make sure sume sebati.
then masukkan dlm loyang. *make sure loyang
tu sapu butter utk bg adunan kek tak melekat :)
then masukkan dlm oven. biarkan about 25-30mins.
*loyang jgn tebal sgt, nanti cake tak masak kat tengah.
besar takpe, jgn tebal sgt.

7. bila dah masak, biarkan sejuk. then baru potong,
bukakan kek dari loyang.

8. frosting : in bowl of electric mixer, beat cream cheese n butter (low speed).
bila dah sebati, masukkan gula n continue beat with low speed
untill smooth. then masukkan lemon zest, vanilla extract n hazelnut chunks.
siap!

  4. yang, buttercup is not butter actually, it's margarine.. :) one fact tht i learned while learning food act..
